I like to experiment and bring some new healthy recipes to my family, especially my 4 years old daughter, who seems to be very picky at this moment...
Last night I made a Blueberry Chocolate muffin! Success! Not only healthy, but also taste good and very easy to make. Takes only 10 minutes to make (I'm busy mom) and 30 minutes to bake!
This is the ingredients:
2 cups of Buckwheat flower
1 cup of Flaxseed milk
1,5 cup of frozen or fresh blueberries
2 Egg yolks (for vegan option you can use chia seeds or apple sauce)
2 spoons of Cacao powder
2 spoons of Monk Fruit sweetener
2 spoons of Stevia
(You can choose other healthy sweeteners like honey, maple syrup, agave. I chose Monk Fruit and Stevia, because they don't rise the sugar level up)
1 teaspoon of Baking soda
2 spoons of Apple Cider vinegar
Mix eggs with Stevia and Monk fruit sweetener, add raw Cacao powder, blueberries, mixed it very well. In a cup poor an apple cider vinegar and mix with baking soda, add flaxseed milk and put everything together with the rest of the mass, then gradually start adding Buckwheat flower, mix everything very well.
Place the mixture into a cupcake forms and bake it in a 350 F for 30 minutes.
Enjoy cupcakes warm or cold with a cup of Flaxseed milk, Coconut or Almond milk, tea, or your favorite beverage!
It's a great replacement for your breakfast or mid morning snack if you are looking for a fast but healthy solution.
You can satisfy your sweet tooth if you don't want to have a sugar full treats for your Christmas!
